Super Easy Sunbutter Treats

I’m not much of a baker but I love this super easy recipe for sunflower seed butter treats. What I love more is that each treat contains just 1 teaspoon of sugar (4 grams). Sunflower seed butter is a terrific alternative for people who suffer from nut or peanut allergies or for anyone looking for an alternative to their usual peanut or nut butter. Plus, sunflower seeds are an excellent source of nutrients, including vitamin E (a powerful antioxidant), protein, and phytochemicals (anti-inflammatory substances).

This recipe is appropriate for low FODMAPers and people following low fiber/roughage/residue diets since the sunflower seeds are broken down in a blender before eating.

Watermelon and Mint Salad Recipe

I’m hesitant to call this a salad because I fear people who are following a low-fiber diet might immediately bypass this recipe. No need. Watermelon is a low fiber, hydrating fruit that pairs incredibly well with mint and feta. This is a bare-bones version of a watermelon salad; feel free to add other herbs (dill), olives or cucumbers to jazz it up.
